Steps

  • In a spacious bowl, whisk together the sifted flour and cocoa powder until no streaks remain.
  • In another bowl, whisk the room temperature eggs, sugar, vegetable oil, and vanilla extract until slightly pale, around 1-2 minutes.
  • Gently fold the wet ingredients into the dry mixture until just combined.
  • Cover the dough and refrigerate for at least 2 hours or overnight.
  • Roll tablespoon-sized portions of dough into balls, coating generously first in granulated sugar, followed by powdered sugar.
  • Preheat your oven to 350°F (175°C) and place the sugar-coated dough balls on a parchment-lined baking sheet. Bake for 11-13 minutes.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes
