Ingredients

For the Salad Base

  • 2 cups Napa Cabbage Provides a crispy base and mild flavor; perfect for that crunchy texture.
  • 2 cups Romaine Lettuce Adds a refreshing crunch; can be omitted if you prefer a lighter salad.
  • 2 cups Baby Spinach Offers nutrients and a tender texture; substitute with kale for a more peppery taste.

For the Crunch

  • 1 cup Chow Mein Noodles Adds a delightful crunch; feel free to replace with cooked ramen noodles for a twist.
  • 1/2 cup Almonds Contributes a nutty flavor and extra crunch; peanuts are a great substitute for a classic Asian touch.

For Protein

  • 2 cups Rotisserie Chicken Adds hearty protein to make the salad filling; try grilled tofu for a delicious vegetarian option.

For the Dressings

  • 1/4 cup Peanut Sauce Elevates flavor; blend rice vinegar, peanut butter, honey, soy sauce, and minced onion to perfection.
  • 1/4 cup Vinaigrette A sweet and tangy dressing made with rice vinegar, sesame oil, and honey.

Instructions

Prepare the Dressings

  • Whisk the Peanut Sauce: In a bowl, combine peanut butter and rice vinegar. Add soy sauce, honey, black pepper, and minced onion. Mix in sesame oil and olive oil, then refrigerate to thicken slightly.
  • Prepare the Vinaigrette: In another bowl, whisk together rice vinegar, honey, garlic chili crunch, and sesame oil until blended. Keep it in the fridge until you're ready to dress the salad.

Prepare the Salad

  • Toast the Almonds: Heat a skillet over medium heat and gently toast the almonds until golden brown, about 5 minutes. Remove from the heat and let them cool.
  • Chop the Veggies: Slice the Napa cabbage, Romaine lettuce, and baby spinach into bite-sized pieces.
  • Assemble the Salad: In a large salad bowl, mix all the chopped vegetables. Drizzle with the vinaigrette and toss to coat them evenly.
  • Add Chicken and Toppings: Layer in the rotisserie chicken, chow mein noodles, and toasted almonds. Finish with a generous drizzle of the peanut sauce and toss gently until everything is well combined.

Notes

Optional: Garnish with freshly chopped cilantro for an extra burst of flavor.
