Ingredients
  

For the Sauce

  • 1 tablespoon sesame oil Adds distinct flavor and richness
  • ¼ cup tamari or soy sauce Choose Tamari for a gluten-free option
  • 2 tablespoons Thai sweet red chili sauce Adjust to taste
  • 1 tablespoon lime juice Fresh lime recommended
  • 1 teaspoon maple syrup or honey Agave syrup as a vegan alternative

For the Filling

  • 10 oz ground chicken Main protein
  • ¼ cup onion, diced Use yellow or white onion
  • 2 cloves garlic Fresh garlic preferred
  • 1 tablespoon fresh minced ginger Can substitute with ginger paste
  • cup cashews, chopped Alternatively use peanuts
  • ¼ cup scallions, chopped Optional but recommended
  • ¼ cup fresh cilantro, chopped Can substitute with parsley
  • ¼-½ cup shredded carrots Optional for texture

For the Wrap

  • 1 head butter lettuce Preferred for wrapping
  • sesame seeds Optional garnish

Instructions
 

Preparation

  • Heat 1 tablespoon of sesame oil in a large pan over medium-high heat. Sauté ¼ cup diced onions for 2-3 minutes until soft.
  • Add 2 minced cloves of garlic and 1 tablespoon of fresh minced ginger. Cook for an additional 2 minutes until fragrant.
  • Introduce 10 oz of ground chicken to the pan, breaking it up with a spoon. Cook until the chicken is no longer pink, about 3-4 minutes.
  • Season with salt and pepper to taste.
  • In a separate bowl, whisk together ¼ cup tamari, 2 tablespoons Thai sweet red chili sauce, the juice of 1 lime, and 1 teaspoon of maple syrup or honey.
  • Pour the chili sauce over the cooked chicken mixture. Add ⅓ cup chopped cashews and stir well. Reduce heat to low, cooking for 2 additional minutes until heated through.
  • Remove the pan from heat and let the mixture cool slightly. Stir in ¼ cup shredded carrots, ¼ cup chopped scallions, and ¼ cup chopped cilantro.
  • Take a butter lettuce leaf and spoon some of the chicken mixture into the center. Drizzle with any remaining sauce and top with optional sesame seeds before serving.

Notes

For added crunch, sprinkle with additional chopped peanuts or cashews. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
