Ingredients
  

For the Filling

  • 1 pound Ground Chicken using skinless thighs keeps the wraps juicy
  • 1 cup Water Chestnuts opt for fresh for a different texture
  • 1 cup Dried Shiitake Mushrooms can switch to fresh
  • 2 tablespoons Reduced Sodium Soy Sauce tamari works as a gluten-free substitute
  • 1 tablespoon Dark Soy Sauce omit for a milder taste
  • 1 tablespoon Oyster Sauce hoisin sauce can be used for a vegetarian version
  • 1 tablespoon Sesame Oil olive oil can be a lighter option
  • 1 tablespoon Rice Wine or Dry Sherry apple cider vinegar is a suitable substitute
  • 1 teaspoon Sugar try honey or monk fruit for a healthier option
  • 1/2 teaspoon Freshly Ground White Pepper black pepper can be used
  • 2 cloves Garlic or garlic powder if in a pinch

For the Wraps

  • 12 leaves Iceberg Lettuce substitute with Boston or endive

For the Dipping Sauce

  • 1/4 cup Hoisin Sauce a homemade mix of soy sauce and sugar can stand in
  • 1 tablespoon Chili Sauce (Sriracha) omit for a milder dipping experience

Instructions
 

Preparation

  • Soak dried shiitake mushrooms in hot water until softened, about 20-30 minutes. Rinse, remove the stems, and chop them into small pieces.
  • Mix reduced sodium soy sauce, oyster sauce, ½ teaspoon sesame oil, rice wine, sugar, and freshly ground white pepper in a bowl.
  • Combine ground chicken, chopped mushrooms, and water chestnuts in a large bowl. Add the soy sauce mixture; toss together and let it marinate for about 15 minutes.
  • Prepare the spicy Hoisin dipping sauce by mixing hoisin sauce, chili sauce, and a splash of warm water; adjust to taste.

Cooking

  • Heat remaining sesame oil in a wok or large skillet over medium heat. Add minced garlic and cook until golden, about 1 minute.
  • Add the marinated chicken mixture and stir-fry for about 4-5 minutes, ensuring the chicken is browned and cooked through.
  • Serve by spooning the chicken mixture into each lettuce leaf. Garnish with chopped scallions and spicy hoisin sauce.

Notes

Top with crushed peanuts for added crunch. Assemble wraps just before serving for best texture.
