  • In a large pot, cook diced bacon over medium heat until crispy, stirring occasionally. Remove bacon and set aside, keeping about 1 tablespoon of fat in the pot.
  • Add diced onion, celery, and minced garlic to the remaining bacon fat in the same pot. Sauté until fragrant and onions are translucent, about 4-5 minutes.
  • Stir in smoked paprika and cayenne pepper, allowing them to bloom in the fat for about 30 seconds.
  • Add rinsed black-eyed peas, reserved crispy bacon, chicken broth, bay leaf, and fresh thyme. Stir everything together well.
  • Bring to a boil, then reduce heat and let it simmer gently for 60-80 minutes, checking occasionally.
  • Once peas are tender, season with salt and black pepper to taste.
  • Stir in chopped collard greens and simmer for an additional 15-30 minutes until tender.

Notes

For an extra kick, serve with a dash of hot sauce. Rinse the peas thoroughly before cooking and add salt just before serving for the best texture.
