Ingredients
  

Filling

  • 1 lb Ground Turkey or ground chicken as substitute
  • 1 cup Chilies canned diced or fresh
  • 4 stalks Green Onions use both white and green parts
  • 0.5 cup Cilantro omit for cilantro-free version
  • 0.5 cup Sour Cream Daisy brand recommended
  • 1 tsp Cumin essential for flavor
  • 1 tbsp Ancho Chili Powder substitute with regular chili powder if needed

White Sauce

  • 1 cup Heavy Cream or half-and-half as lighter alternative
  • 1 cup Salsa Verde Herdez brand recommended
  • 1 tsp Garlic Powder

Topping

  • 2 cups Monterey Jack Cheese freshly shredded

Tortillas

  • 8 pieces Flour Tortillas warm them first

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Combine filling ingredients in a large bowl. Season with salt and pepper.
  • Whisk together the white sauce ingredients until smooth and creamy.
  • Warm the flour tortillas in the microwave for about 30 seconds.
  • Fill each tortilla with about 1/3 cup of the turkey mixture and roll them up tightly.
  • Place the rolled enchiladas seam-side down in the baking dish.
  • Pour the creamy white sauce over the enchiladas and sprinkle the cheese on top.
  • Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes.
  • Let rest for 5 minutes before serving.

Notes

Optional: Garnish with chopped cilantro before serving.
