Ingredients
  

For the Sweet Potatoes

  • 4 medium Sweet Potatoes cubed
  • 1.5 tbsp Olive Oil

For the Turkey

  • 1 lb Ground Turkey lean
  • 1 tbsp Taco Seasoning or homemade mix
  • to taste Salt
  • to taste Black Pepper
  • 1 tsp Smoked Paprika

For the Toppings

  • 1 cup Pico de Gallo fresh
  • 1 cup Guacamole
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/2 cup Queso Fresco crumbled
  • 1/4 cup Cilantro chopped

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • Scrub and cube the sweet potatoes into bite-sized pieces, toss them with olive oil, salt, and pepper, spread on a baking sheet, and roast for 35-45 minutes.
  • While the potatoes are roasting, heat a skillet over medium-high heat and brown the ground turkey for 4-5 minutes.
  • Stir in the taco seasoning, smoked paprika, salt, and pepper, cooking for an additional 1-2 minutes.
  • Once the sweet potatoes are done, mash a layer in each bowl, top with the seasoned turkey, and then add your choice of toppings.
  • Optional: Drizzle with lime juice for extra zing!

Notes

Store components separately in airtight containers for up to 4 days; can freeze turkey and sweet potatoes for up to 3 months.
