  • 1 cup Cold Water Essential for hydrating the gelatin.

Making Bariatric Gelatin

  • In a heat-safe bowl, combine cold water and sprinkle the gelatin evenly over it. Let it sit for about 5 minutes to hydrate.
  • Gently heat the sugar-free fruit juice in a small pot over low heat, ensuring it does not boil.
  • Stir the bloomed gelatin into the warm juice until completely dissolved and the mixture becomes clear.
  • Pour the gelatin mixture into silicone molds or small cups for easy servings.
  • Place molds in the refrigerator and allow them to set for about 3 hours.

Notes

Optional: Garnish with yogurt or fresh mint for presentation. Store in an airtight container for up to 5 days.
