  • 4 pieces Bell Peppers any color

For the Filling

  • 1 pound Ground Beef or ground turkey
  • 1 cup Rice cooked
  • 1 cup Cheddar Cheese shredded
  • 1 medium Red Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes don't drain
  • 2 tablespoons Worcestershire Sauce
  • 1 can Green Chilies
  • to taste Salt & Pepper for seasoning
  • 1 teaspoon Thyme
  • 1 teaspoon Smoked Paprika

Optional Toppings

  • 1 cup Extra Cheddar Cheese for topping
  • to taste Fresh Herbs such as cilantro or parsley

How to Make Best BBQ Stuffed Bell Peppers

  • Halve the bell peppers lengthwise, removing seeds and membranes. Preheat your grill to 375°F.
  • Follow the package instructions to cook the rice, about 18-20 minutes.
  • Heat olive oil in a skillet over medium-high heat, sauté the red onion until soft, about 5 minutes.
  • Add ground beef, cook for 6-8 minutes until browned and moisture has evaporated.
  • Stir in minced garlic and cook for 1 minute until aromatic.
  • Combine cooked rice, diced tomatoes, Worcestershire sauce, green chilies, seasonings, and half of the cheddar cheese; cook for 2-3 minutes.
  • Spoon the filling into each pepper half and sprinkle the remaining cheddar cheese on top.
  • Place on the grill with indirect heat; cook for 30-40 minutes until soft and cheese is golden.

Notes

Keep peppers stable by trimming the bottoms if they wobble. Use indirect heat for grilling.
