  • Layer the Base: Start by adding trimmed chicken breasts to the bottom of a 6-quart slow cooker. Then, top it off with chopped onion, sliced carrots, diced celery, minced garlic, thyme, rosemary, salt, pepper, and the optional bay leaf for a little extra flavor.
  • Combine with Broth: Spoon the chicken bouillon over the top, then pour in the reduced sodium chicken broth. Gently stir everything together to ensure the seasonings are evenly distributed. Cover and set it to LOW for 6-8 hours or HIGH for 3-4 hours.
  • Shred the Chicken: Once your cooking time is up, lift the chicken out of the slow cooker using tongs. Place it in a large mixing bowl and shred it with two forks. Discard the bay leaf if you added one, then return the shredded chicken back to the slow cooker, mixing it in with the broth and veggies.
  • Cook the Noodles: Prepare the egg noodles according to the package directions, cooking them until al dente. This usually takes about 5-7 minutes in boiling water.
  • Blend and Heat: Add the cooked egg noodles to the soup in the slow cooker. Let it cook on LOW for about 5 minutes, allowing the flavors to meld together beautifully.
  • Serve and Enjoy: Serve warm, garnished with freshly minced parsley and a sprinkle of black pepper for an inviting finish.
