  • 1 cup Cottage Cheese low-fat for a lighter option
  • 1 tablespoon Olive Oil extra virgin recommended

Vegetables

  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumbers diced
  • 1 medium Bell Pepper finely diced
  • 1 small Red Onion finely diced

Toppings

  • 2 tablespoons Fresh Dill chopped
  • 1/2 cup Kalamata Olives halved
  • 1/2 cup Feta Cheese crumbled

Preparation

  • Start by halving the cherry tomatoes, dicing cucumbers and bell peppers, and finely dicing the red onion. Don't forget to pit and halve the Kalamata olives.
  • In a lovely serving bowl, combine the cottage cheese with half of the freshly chopped dill. Gently fold the dill into the cottage cheese.
  • Top the cottage cheese base with the cherry tomatoes, cucumbers, and bell pepper. Add a pinch of salt and freshly ground pepper to taste.
  • Sprinkle the halved olives and crumbled feta cheese generously on top, and use the remaining dill as a garnish.
  • Drizzle a light amount of high-quality extra virgin olive oil over the bowl before serving.

Notes

Pat and dry wet vegetables after chopping to prevent a watery bowl. Season each component carefully to maintain balanced flavors.
