  • 2 lbs Chicken Breast Substitute with chicken thighs for extra moisture.
  • 1 cup Salsa Use your favorite variety.
  • 1 cup Chicken Broth Can substitute with vegetable broth.

For the Spice Blend

  • 2 tbsp Chili Powder Adjust based on spice preference.
  • 1 tbsp Cumin Reduce for milder taste.
  • 1 tbsp Paprika Use sweet paprika for less intensity.
  • 1 tbsp Garlic Powder Swap with fresh garlic (1:1) if desired.
  • 1 tbsp Onion Powder Fresh onions can be sautéed (use 1/4 cup chopped).
  • 1 tsp Chipotle Powder Omit if you prefer milder tacos.

For Flavor Brightening

  • 2 tbsp Lime Juice Fresh is ideal.

Preparation

  • In a bowl, combine the chili powder, cumin, paprika, garlic powder, onion powder, and chipotle powder.
  • Pour the salsa and chicken broth into your slow cooker. Stir in the mixed spices.
  • Place the chicken breasts in the slow cooker, ensuring they’re fully submerged. Squeeze fresh lime juice over the top.
  • Cover the slow cooker and set it to cook on low for 4-6 hours or high for 3-4 hours.
  • Once fully cooked, shred the chicken right in the slow cooker with two forks.
  • Scoop the shredded chicken into warm tortillas and add your favorite toppings.

Notes

Optional: Garnish with fresh cilantro for added flavor and color. Store leftovers in an airtight container for up to 4 days.
