Ingredients
  

For the Broth

Making the Broth

  • Preheat your oven to 425°F (218°C). Place the bones on a baking sheet and roast for about 30 minutes, until browned.
  • Layer the roasted bones in your pressure cooker along with the onion, carrots, celery, garlic, bay leaves, peppercorns, vinegar, and salt. Pour in 12-14 cups of water, ensuring you don't exceed the fill line. Secure the lid and cook on high pressure for 3 hours (4 hours for beef or pork). Allow natural pressure release afterward.
  • Transfer the roasted bones and other ingredients into the slow cooker. Add 12-14 cups of water, cover it, and let it cook on low for 24-48 hours.
  • After cooking, strain the broth through a fine-mesh strainer into a large bowl. Discard the solids.
  • Let the broth cool completely, then skim off any fat that rises to the top. Store it in the refrigerator for up to 5 days, or freeze for up to 3 months.

Notes

Add fresh herbs just before serving for a burst of flavor.
