Ingredients
  

For the Chicken

  • 4 pieces Boneless Skinless Chicken Breasts Substitute with chicken thighs for juicier texture.
  • 1 tablespoon Olive Oil Can use canola or avocado oil.
  • 2 tablespoons Cajun Seasoning Feel free to experiment with Creole seasoning.

For the Veggies

For the Base

For the Chipotle Sauce

  • 1/2 cup Mayonnaise or Plain Greek Yogurt Greek yogurt for a lower-calorie option.
  • 1 teaspoon Chipotle Chili Powder Use canned chipotle peppers in adobo for more heat.
  • 1 teaspoon Garlic Powder Consider fresh minced garlic for more flavor.
  • 1 tablespoon Lemon Juice Lime juice can be substituted.

Instructions
 

Directions

  • Preheat your oven to 425°F (220°C).
  • On a sheet pan, combine sweet potatoes and broccoli with 1 tablespoon of olive oil and ½ tablespoon of Cajun seasoning. Toss to coat evenly.
  • In a separate bowl, toss chicken breasts with remaining olive oil and Cajun seasoning.
  • Spread seasoned chicken on another sheet pan in a single layer.
  • Bake both sheet pans for 15-20 minutes until chicken reaches 165°F (74°C) and sweet potatoes are fork-tender.
  • In a small bowl, whisk mayonnaise, chipotle chili powder, garlic powder, lemon juice, honey, salt, and pepper together until smooth.
  • To serve, fill each bowl with cooked white rice, layer with roasted chicken, sweet potatoes, and broccoli, top with avocado slices and green onions, and drizzle with chipotle sauce.
