Chicken Noodle Soup

Classic homemade chicken noodle soup packed with flavor and comfort. Ready in under 45 minutes and perfect for chilly days or busy weeknights.

Equipment

  • - Large soup pot
  • Wooden spoon
  • Cutting board & knife
  • Measuring cups & spoons

Ingredients
  

  • - 1 tablespoon olive oil
  • - 1 tablespoon unsalted butter
  • - 1 medium yellow onion diced
  • - 2 carrots peeled and sliced
  • - 2 celery stalks chopped
  • - 2 garlic cloves minced
  • - 4 cups low-sodium chicken broth
  • - 2 cups water
  • - 1.5 lbs boneless skinless chicken breasts
  • - ½ tsp Italian seasoning
  • - 2 cups egg noodles
  • - Salt and pepper to taste
  • - 1 tbsp chopped fresh parsley

Instructions
 

  • Heat oil and butter in a large pot over medium-high heat.
  • Add onion, carrots, and celery. Cook until softened.
  • Add garlic and sauté briefly.
  • Add broth, water, chicken, and seasoning. Simmer 15 minutes.
  • Add noodles and cook 8–10 minutes more.
  • Shred the chicken, return to the pot.
  • Season with salt, pepper, and parsley.

Notes

- For freezer storage, omit noodles and add them fresh when reheating.
- Add lemon juice for a fresh twist.
- Chicken thighs or rotisserie chicken work well too.
