  • 1/2 cup Light Brown Sugar
  • 2 large Large Eggs preferably free-range
  • 1 teaspoon Pure Vanilla Extract or homemade
  • 2 cups Mashed Bananas approximately 4 large ripe bananas
  • 2 cups All-Purpose Flour or whole wheat flour
  • 1 teaspoon Baking Powder ensure freshness
  • 1/2 teaspoon Baking Soda ensure freshness
  • 1 teaspoon Ground Cinnamon adjust for taste
  • 1/2 teaspoon Salt for flavor balance

For the Swirl

  • 1/4 cup Cinnamon Sugar mix of granulated sugar and ground cinnamon

How to Make Cinnamon Swirl Banana Bread

  • Preheat your oven to 350°F (180°C). Grease a 9x5-inch loaf pan with cooking spray and line it with parchment paper.
  • In a mixing bowl, cream softened unsalted butter with granulated and light brown sugars until light and fluffy, about 3-4 minutes.
  • Add large eggs and pure vanilla extract to the butter mixture, blending thoroughly before mixing in the mashed bananas until combined.
  • In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  • Combine granulated sugar and ground cinnamon in a small bowl to create the cinnamon sugar.
  • For a single swirl, pour half the batter into the prepared pan, sprinkle with half of the cinnamon sugar, then layer with the remaining batter. For a double swirl, layer one-third of the batter with cinnamon sugar, then repeat.
  • Bake for 55-65 minutes, checking for doneness with a toothpick; if needed, tent with foil if browning too quickly.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve warm with a pat of butter for an extra treat.
