  • 2 cups Yukon Gold Potatoes Diced
  • 1 cup Bell Peppers Diced, any color
  • 1 medium Yellow Onion Diced
  • 2 tablespoons Olive Oil For roasting vegetables
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt
  • 1/4 teaspoon Cayenne Pepper Optional
  • 1 teaspoon Garlic Powder
  • 12 ounces Pre-cooked Chicken Sausage Sliced
  • 1 cup Cottage Cheese (full-fat) Blended
  • 4 large Eggs
  • 1 cup Shredded Cheddar Cheese

For the Wrap

  • 4 pieces Tortillas Any style

Preparation Steps

  • Preheat your oven to 400°F.
  • Dice the Yukon Gold potatoes, bell peppers, and onion. Combine them in a baking dish with olive oil and Italian seasoning, tossing to coat all the veggies.
  • Roast the mixture in the oven for 15 minutes until the vegetables have softened and released their wonderful aroma.
  • Add sliced chicken sausage to the baking dish. Return it to the oven for another 15 minutes.
  • Blend the cottage cheese and large eggs together until smooth.
  • Pour the egg mixture over the roasted vegetables and sausage, then sprinkle with shredded cheddar cheese. Bake for an additional 10-15 minutes.
  • Cool the dish for 10 minutes.
  • Warm the tortillas and carefully wrap them around the hearty filling.
