Ingredients
  

For the Soup Base

  • 2 tbsp Olive Oil Can be replaced with avocado oil
  • 2 stalks Celery Chopped; can substitute with green bell pepper
  • 0.5 units Onion Diced; yellow or sweet onions work well
  • 3 cloves Garlic Minced; fresh preferred
  • 0.5 tsp Italian Seasoning Can be substituted with dried oregano or basil

For the Protein and Veggies

  • 1 lb Ground Turkey Can use ground chicken or beef
  • 1 can White Beans Rinsed; can substitute with chickpeas
  • 1 unit Red Bell Pepper Diced; can use any bell pepper
  • 2 units Carrots Sliced into ¼-inch rounds; can substitute with peas or corn
  • 2 cups Spinach Can substitute with kale or Swiss chard

For the Liquid

  • 5 cups Chicken Broth Homemade or low-sodium versions are good alternatives
  • 1 cup Water Can replace with broth for richer flavor

For the Pasta and Finish

  • 1.5 cups Fusilli Pasta Any small pasta shape works
  • 1 tbsp Lemon Juice Can leave out for less tangy taste
  • Salt & Pepper Essential seasoning to taste

Instructions
 

Directions

  • Start by chopping the celery, onion, and carrots; mince the garlic; dice the red bell pepper; and rinse the beans.
  • In a large pot over medium heat, warm the olive oil until shimmering.
  • Sauté the celery and onion for 4-5 minutes until translucent. Add garlic and Italian seasoning, cooking for 30 seconds.
  • Add the ground turkey, breaking it apart and browning for about 4-5 minutes.
  • Stir in the white beans, sliced carrots, chicken broth, and water. Bring to a boil, cover, and simmer for 10 minutes.
  • Remove the lid and add the fusilli pasta. Cook until tender, about 10 minutes.
  • Stir in the lemon juice, diced bell pepper, and spinach. Cook for 2 minutes until spinach wilts.
  • Adjust with salt and pepper to taste and serve hot.

Notes

For the best reheating experience, cook pasta separately when storing leftovers. Pair with crusty bread for dipping.
