Ingredients
  

For the Potatoes

  • 2 pounds russet potatoes Alternatively, Yukon Gold can be used for creaminess.
  • 1 tablespoon salt For boiling water.

For the Creamy Mixture

  • 8 ounces mascarpone cheese Ensure it's at room temperature.
  • 4 tablespoons salted butter Softened before combining.
  • 1/2 cup heavy cream Adjust based on richness preference.
  • 1/2 cup Parmesan cheese Freshly grated is best for flavor.

Preparation

  • Peel and cut russet potatoes into 2-inch chunks.
  • Bring a large pot of salted water to a rolling boil, then add the potato chunks. Cook for 10-12 minutes until tender.
  • While the potatoes are cooking, let the mascarpone cheese and salted butter come to room temperature.
  • Once the potatoes are cooked, drain thoroughly and return them to the hot pot.
  • Using a potato masher, mash the potatoes until smooth.
  • While still warm, fold in the mascarpone, butter, heavy cream, grated Parmesan, and salt.
  • Taste and adjust the salt as needed. Serve warm.

Notes
