Directions

  • Warm olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5-7 minutes.
  • Increase heat to medium-high and add ground beef. Cook until browned, around 5-7 minutes.
  • Stir in minced garlic, Italian herbs, tomato paste, salt, pepper, and red pepper flakes. Cook for 1 minute.
  • Pour in the marinara sauce and beef broth, stirring to combine.
  • Bring to a boil, then reduce to a simmer. Break lasagna noodles into 1-inch pieces and add to the pot.
  • Allow noodles to cook for 1-2 minutes less than package instructions recommend.
  • Add spinach to the pot and stir until just wilted, about 1 minute.
  • Off the heat, gently fold in the cottage cheese.
  • Ladle the soup into bowls and garnish with Parmesan cheese.

Notes

Consider adding fresh basil or a drizzle of olive oil for a vibrant garnish.
