  • 24 oz Italian Sauce any preferred marinara sauce
  • 6 cups Chicken Broth vegetable broth for vegetarian option
  • 14.5 oz Crushed Tomatoes fresh tomatoes can be used
  • 2 tablespoons Tomato Paste swap with more crushed tomatoes if necessary
  • 1 tablespoon Balsamic Vinegar red wine vinegar can replace it
  • 1 teaspoon Sugar

For the Herbs & Seasonings

  • 1 tablespoon Dried Herbs Basil, Parsley, Oregano
  • 1 teaspoon Fennel Seeds omit if desired

For the Pasta & Creaminess

  • 8 oz Lasagna Noodles use gluten-free noodles for gluten-free option
  • 1 cup Cream substitute with half-and-half or skip

For Garnishing

  • 1/4 cup Fresh Basil or parsley
  • 1 cup Mozzarella can swap with any cheese
  • 1/2 cup Parmesan
  • 1 cup Ricotta

How to Make Rich Lasagna Soup with Ricotta

  • Cook the Meat: Heat a large pot over medium-high heat and add ground beef. Cook until browned, then add diced onion and sauté until softened, about 5-7 minutes.
  • Sauté Aromatics: Drain excess fat, leaving about a tablespoon for flavor. Stir in minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  • Combine Ingredients: Add Italian sauce, crushed tomatoes, tomato paste, balsamic vinegar, sugar, dried herbs, and other seasonings. Stir well and pour in 6 cups of chicken broth; bring this mixture to a boil.
  • Add Noodles: Break lasagna noodles into 1-2 inch pieces and add to the boiling soup. Lower heat and simmer for 20-30 minutes, stirring occasionally until the noodles are tender.
  • Finish the Soup: Remove the bay leaf, then stir in cream to achieve your desired richness. Adjust thickness with any remaining broth and gently warm without boiling. Season to taste.
  • Serve and Enjoy: Ladle the soup into bowls, topping with dollops of ricotta, mozzarella, parmesan, and a sprinkle of fresh basil for a delightful finishing touch.

Notes
