  • 1 tbsp Dijon Mustard can substitute with yellow mustard
  • 1 tsp Garlic Powder or use fresh garlic
  • 1 tsp Paprika
  • to taste Salt & Black Pepper freshly ground is recommended
  • 2 tbsp Green Onion can substitute with chives

For the Toppings

  • 1 tbsp Everything Bagel Seasoning alternatives include sesame or poppy seeds
  • 1 tbsp Hemp Seeds or sunflower seeds

For the Base

  • 1 slice Bread select a type that toasts well

Preparation Steps

  • Start by placing your egg in a pot of cold water. Bring it to a gentle boil, cover, and let it cook for 9-12 minutes. Then, transfer the egg to an ice bath to ensure it stops cooking.
  • While your egg is boiling, slice your chosen bread and gather all the spices and garnishes you’ll need.
  • Toast your bread until it reaches a beautiful golden brown.
  • In a mixing bowl, combine the peeled hard-boiled egg, cottage cheese, and avocado. Mash everything together until you reach your desired smoothness.
  • Fold in the paprika, salt, freshly cracked black pepper, garlic powder, Dijon mustard, and chopped green onion. Blend well until all the flavors marry together beautifully.
  • Generously spread the cottage cheese mixture on each slice of toasted bread. Sprinkle with everything bagel seasoning and finish with hemp seeds.
