Ingredients
  

  • - 2 cups cottage cheese
  • - 1 cup bell peppers chopped
  • - 1 medium zucchini diced
  • - 1 cup cherry tomatoes halved
  • - 1 small onion diced
  • - 1 tsp garlic powder
  • - 1 cup shredded cheese
  • - 1 tsp Italian seasoning
  • - 1 tbsp olive oil
  • - 1 tsp crushed red pepper flakes optional
  • - Salt and pepper to taste
  • - Fresh basil optional

Instructions
 

  • Wash and chop all veggies.
  • In a skillet, heat olive oil. Sauté onion for 3–4 mins. Add garlic and red pepper flakes.
  • Add zucchini, peppers, tomatoes. Cook 5–7 mins until tender.
  • In a bowl, combine sautéed veggies, cottage cheese, and seasoning.
  • Transfer to an oven-safe dish and top with shredded cheese.
  • Broil for 2–3 mins until cheese is melted and golden.
  • Garnish with basil and serve warm.

Notes

- Meal prep friendly: store unbaked mix 3 days in fridge
- Swap in spinach or mushrooms for variety
- Bake instead of broil for a softer melt
