Ingredients
  

For the Filling

  • 8 oz Cream Cheese at room temperature
  • 1 cup Sharp Cheddar Cheese or preferred cheese
  • 2 tbsp Chives fresh or dried
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Black Pepper to taste

For the Peppers

  • 12 pieces Mini Bell Peppers assorted colors

Optional Garnishes

  • 2 tbsp Chopped Chives
  • 1 tsp Crushed Red Pepper to taste

Preparation

  • Preheat the oven to 400°F (200°C) if you plan to roast the peppers.
  • Prepare the mini peppers by slicing them in half lengthwise and removing the seeds.
  • Mix the filling by combining the softened cream cheese, sharp cheddar cheese, chives, garlic powder, onion powder, and black pepper in a bowl until well blended.
  • Stuff each mini pepper half generously with the cheese mixture.
  • Bake the stuffed peppers on a baking sheet for about 8 minutes.
  • Garnish your peppers with additional chopped chives or a sprinkle of crushed red pepper before serving.

Notes

Serve with a side of your favorite dipping sauce for added flavor. These can be served cold as well, and flavors meld beautifully when prepared a few hours in advance and chilled.
