  • In a blender, add Dijon mustard, balsamic or red wine vinegar, Worcestershire sauce, anchovy filets, garlic cloves, lemon juice, and optional egg yolk.
  • Pulse the mixture on medium until smooth, about 30 seconds.
  • With the blender running, slowly drizzle in olive oil until emulsified.
  • Toss in Parmesan cheese, black pepper, and kosher salt. Blend briefly.
  • Taste and adjust seasonings as necessary.
  • Transfer to an airtight container and refrigerate.
