- 2 tablespoons olive oil
- 1 small white onion diced
- 1 stalk celery chopped
- 1 cup shredded carrots
- 2 teaspoons minced garlic
- 3 cups cooked chicken breast diced or shredded
- 4 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 16 oz package potato gnocchi
- 2 cups half-and-half or 1 cup half-and-half + 1 cup heavy cream
- 1½ cups fresh spinach chopped
Heat oil in a large pot over medium heat. Add onion, celery, carrots, and garlic. Sauté 3–4 minutes.
Add chicken, broth, thyme, salt, and pepper. Bring to a boil.
Stir in gnocchi and cook until they float, about 4–5 minutes.
Lower heat and stir in cream and spinach. Simmer 2–3 minutes.
Taste, adjust seasoning, and serve hot.
