Ingredients
  

  • 2 tablespoons olive oil
  • 1 small white onion diced
  • 1 stalk celery chopped
  • 1 cup shredded carrots
  • 2 teaspoons minced garlic
  • 3 cups cooked chicken breast diced or shredded
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 16 oz package potato gnocchi
  • 2 cups half-and-half or 1 cup half-and-half + 1 cup heavy cream
  • cups fresh spinach chopped

Instructions
 

  • Heat oil in a large pot over medium heat. Add onion, celery, carrots, and garlic. Sauté 3–4 minutes.
  • Add chicken, broth, thyme, salt, and pepper. Bring to a boil.
  • Stir in gnocchi and cook until they float, about 4–5 minutes.
  • Lower heat and stir in cream and spinach. Simmer 2–3 minutes.
  • Taste, adjust seasoning, and serve hot.

Notes

Use rotisserie chicken to save time
Add extra veggies or cream to customize
Store leftovers up to 4 days in the fridge
