For the Potatoes

  • 2 lbs Yukon Gold Potatoes peeled and cut

For the Aromatics

  • 1 tsp Kosher Salt
  • 4 tbsp Butter can substitute with olive oil
  • 4 stalks Scallions chopped; can substitute with chives
  • 2 cloves Garlic minced

For the Greens

  • 4 cups Kale chopped; can substitute with cabbage

For Creaminess

  • 1 cup Milk can use low-fat or dairy alternative
  • 1/2 cup Heavy Cream optional

For Seasoning

  • 1 tsp Freshly Ground Black Pepper

Steps

  • Start by placing peeled, cut Yukon Gold potatoes in a pot with cold salted water. Bring to a boil and cook until fork-tender, about 10-15 minutes. Once done, drain the water.
  • In the same pot, melt some butter over low heat. Add the chopped scallions and minced garlic, cooking until they are fragrant and softened, about 2-3 minutes.
  • Stir in the chopped kale, milk, and heavy cream, letting it simmer for about 4 minutes, or until the kale wilts and the milk starts to bubble gently.
  • Now, combine the potato-kale mixture and mash it until you reach a smooth consistency. Season with kosher salt and freshly ground black pepper, then serve topped with the remaining butter.

Notes

Colcannon pairs beautifully with corned beef, sausage, or roasted chicken. For added richness, top with crispy bacon bits.
