Ingredients
  

For the Base

  • 2 cups Extra-sharp Cheddar cheese freshly grated
  • 8 ounces Cream cheese cut into 1" cubes and softened

For the Mix-ins

  • 4 ounces Pimento peppers well drained and chopped
  • 2 tablespoons Mayonnaise
  • 0.25 teaspoon Garlic powder
  • 0.25 teaspoon Onion powder
  • 0.25 teaspoon Ground cayenne pepper to taste
  • 0.5 medium Jalapeño pepper ribs and seeds removed and minced
  • Freshly ground black pepper to taste
  • Salt to taste

How to Make Pimento Cheese

  • In a large mixing bowl, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper, and jalapeño (if using). Add several twists of black pepper for an extra flavor boost.
  • Beat the mixture together using a hand mixer or simply mix by hand until well combined and creamy.
  • Sample the pimento cheese and add more black pepper and/or salt as desired.
  • Transfer to a serving bowl and serve immediately or chill in the refrigerator for up to 1 week. Allow it to rest at room temperature for 30 minutes before serving.
