  • 2 medium Carrots diced small
  • 2 stalks Celery fresh and crisp
  • 4 large Potatoes cut into 1-inch cubes
  • 1 teaspoon Salt adjust according to taste
  • 1/2 teaspoon Black Pepper freshly ground
  • 1 tablespoon Cajun Spice adjust based on tolerance
  • 4 cups Chicken Broth low-sodium preferred

Thickening and Creaminess

  • 1/4 cup Flour
  • 2 cups Milk
  • 1 cup Cream

Garnishing

  • 1/4 cup Parsley fresh, chopped
  • 1 cup Grated Cheese optional topping

Instructions
 

Prepare the Soup

  • Cook bacon in a large pot over medium heat until crispy. Set aside on paper towels.
  • Add finely diced onions to the bacon fat and cook until fragrant, then stir in minced garlic.
  • Toss in diced carrots and celery, sauté for 2-3 minutes until softened.
  • Stir in cubed potatoes, seasonings, and chicken broth. Bring to a boil, then simmer for 10-15 minutes until potatoes are fork-tender.
  • Whisk flour and milk until smooth, then gradually add to the soup while stirring.
  • Blend half of the soup using an immersion blender for a creamy consistency.
  • Stir in cream and chopped parsley, adjust salt and pepper to taste.
  • Ladle into bowls, and top with crispy bacon bits and grated cheese.
