  • 4 cups potatoes Yukon Gold preferred for texture
  • 6 cups chicken broth low-sodium recommended

For the Greens

  • 2 cups kale remove stems, tear leaves into bite-sized pieces

For the Creaminess

  • 1 cup milk use room temperature

Preparation

  • Start by dicing the onion, mincing the garlic, cutting the potatoes into even 1-inch cubes, and tearing the kale into bite-sized pieces.
  • Melt the butter in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent.
  • Stir in the minced garlic for about 30 seconds, until fragrant.
  • Add the chopped potatoes to the pot, seasoning with salt and pepper.
  • Stir for 2-3 minutes to allow flavors to meld together.
  • Pour in the chicken broth, bringing it to a gentle boil. Reduce the heat to a simmer, allowing the mixture to cook for 8-10 minutes or until the potatoes are tender.
  • Gently stir in the torn kale and continue to simmer for an additional 5 minutes.
  • Remove the pot from heat and blend the soup until creamy.
  • Return the blended soup to the pot. Stir in the remaining chicken broth and gradually add the milk while stirring. Heat gently without boiling.

Notes

Optional: Sprinkle with crispy bacon bits or drizzle with olive oil for added flavor.
