For the Sauce

  • 4 Tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup vegetable broth
  • 2 cloves garlic grated
  • 1 Tbsp fresh thyme leaves
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper

For the Potatoes

  • 2 lbs Yukon Gold potatoes thinly sliced
  • 1 medium yellow onion thinly sliced

For the Cheese Topping

  • 1.5 cups grated cheddar cheese

How to Make Scalloped Potatoes

  • Preheat your oven to 400°F. Grease a 9x13-inch baking dish with unsalted butter.
  • In a medium skillet, melt the unsalted butter over medium heat. Whisk in the all-purpose flour for about 1 minute until lightly golden.
  • Slowly add the whole milk and vegetable broth, whisking continuously. Stir in the grated garlic, fresh thyme, sea salt, and black pepper and cook for 2 to 3 minutes.
  • Arrange half of the sliced Yukon Gold potatoes at the bottom of the baking dish. Top with half the onion, drizzle with half of the creamy sauce, and add 1 cup of cheddar cheese.
  • Repeat the layering with the remaining potatoes, onion, sauce, and the last ½ cup of cheese.
  • Cover with aluminum foil and bake for 30 minutes. Uncover and continue baking for an additional 35 to 40 minutes until the cheese is browned.
  • Let stand at room temperature for 20 minutes before serving.

Notes

Optional: Drizzle with olive oil and sprinkle fresh thyme before serving.
