How to Make Creamy Sundried Tomato “Marry Me” Gnocchi

  • Heat a generous splash of olive oil in a large saucepan over low-medium heat. Add the diced red onions and sauté until they are softened and translucent, about 4-5 minutes.
  • Stir in minced garlic, red pepper flakes, mixed Italian seasoning, salt, and sundried tomatoes. Sauté until fragrant, roughly 1-2 minutes.
  • Incorporate the tomato paste into the mixture and cook for another few minutes. Pour in vegetable broth, stirring well, and let the sauce simmer partially covered for about 10 minutes.
  • In a separate skillet, pan-fry gnocchi in a drizzle of olive oil over low-medium heat until they are golden and crispy, which should take around 10 minutes.
  • Once your gnocchi are fried, return them to the saucepan with the sauce. Gently stir in heavy cream and grated Parmesan-style cheese, simmering until everything is melted and well-combined—about 3-5 minutes.
  • Finally, fold in the fresh baby spinach and chopped basil, mixing until the spinach wilts. Serve hot right off the stove for the best flavor.
