Ingredients
  

  • **For the filling:**
  • - 2 tbsp olive oil
  • - 3 breakfast sausage links
  • - ¼ cup onion chopped
  • - 4 large eggs beaten
  • **For assembly:**
  • - 2 pita bread rounds
  • - ½ tomato chopped
  • - ½ cup chopped spinach
  • - ½ cup shredded cheddar cheese
  • - 1 avocado sliced
  • - Salt & pepper to taste

Instructions
 

  • Preheat oven to 350°F. Line baking sheet with parchment.
  • In skillet, cook sausage until browned. Set aside.
  • In same pan, sauté onion 5 mins. Remove. Then scramble eggs until just set.
  • On pita rounds, layer eggs, sausage, onion, tomato, spinach, and cheese.
  • Bake 10 mins until cheese is bubbly and pita is crisp.
  • Top with avocado slices and serve warm.

Notes

- Add lemon juice over avocado for brightness
- Use any cheese or veggie combos
- Best enjoyed fresh, but reheats well in oven
