- 2 medium zucchinis
- ½ cup grated Parmesan cheese
- ½ cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- Cooking spray or more olive oil
- Optional: fresh parsley
Preheat oven to 425°F (220°C). Line or grease baking sheet.
Wash and slice zucchinis into ¼-inch rounds.
Mix Parmesan, panko, garlic powder, Italian herbs, salt, and pepper.
Toss zucchini in olive oil.
Dredge each slice in cheese mixture and place on tray.
Bake for 20–25 minutes until golden brown and crispy.
Let cool slightly. Garnish and serve!
Use yellow squash for variety
Store in fridge with paper towels to retain crispness
Reheat in oven or air fryer for best texture
