  • 1 leaf bay leaf

For the Brine

  • 1 cup rice vinegar
  • 2 tablespoons fine sea salt
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds optional
  • 1 teaspoon crushed red pepper flakes optional for spice

Preparation

  • Layer the cucumbers, dill, garlic, and bay leaf in a large jar.
  • Whisk together the water, rice vinegar, fine sea salt, black peppercorns, and crushed red pepper flakes in a measuring jar.
