Ingredients
  

  • - 1 lb boneless skinless chicken breasts
  • - 3 carrots diced
  • - 2 celery stalks diced
  • - 1 small onion diced
  • - 3 cloves garlic minced
  • - 4 cups chicken broth
  • - 1 can 10.5 oz cream of chicken soup
  • - 1 tsp Italian seasoning
  • - ½ tsp salt
  • - ¼ tsp black pepper
  • - 1 cup heavy cream or half-and-half
  • - 16 oz potato gnocchi
  • - 2 cups fresh spinach
  • - ½ cup Parmesan cheese shredded
  • - Fresh parsley for garnish

Instructions
 

  • Add chicken, vegetables, broth, soup, and seasonings to slow cooker.
  • Cover and cook on low for 5–6 hrs or high for 3–4 hrs.
  • Remove chicken, shred, and return to the pot.
  • Add gnocchi and cream; cook on high for 30–40 mins.
  • Stir in spinach and Parmesan; cook 5–10 mins more.
  • Serve hot, topped with parsley and more cheese.

Notes

- Use rotisserie chicken to cut prep time
- Freeze without cream or gnocchi, add when reheating
- Swap spinach for kale if preferred
