For the Salad

  • 4 cups shredded green cabbage substitute with napa cabbage for a softer texture
  • 2 cups shredded red cabbage use more green cabbage if needed
  • 1 cup shredded carrots fresh or pre-shredded works perfectly
  • 1 cup shelled edamame steamed; opt for thawed frozen edamame for convenience
  • 2 cups grilled chicken breasts leftovers or rotisserie chicken are great shortcuts
  • 1/4 cup sliced green onions chives can be an excellent substitute

For Optional Toppings

  • 2 tablespoons sesame seeds toasted enhances their flavor
  • 1/4 cup sliced almonds toast for a nutty crunch
  • 1 cup wonton strips adding a perfect bite to your salad
  • 1/4 cup cilantro omit if you're not a fan

For the Sesame-Ginger Vinaigrette

  • 1/4 cup rice vinegar apple cider vinegar can be a suitable substitute
  • 3 tablespoons soy sauce tamari works well for a gluten-free option
  • 2 tablespoons sesame oil extra virgin olive oil can be a replacement
  • 3 tablespoons olive oil any neutral oil can fit
  • 1 tablespoon honey or maple syrup adjust to your preference
  • 1 tablespoon grated fresh ginger use less ground ginger for balance
  • 1 clove garlic minced; fresh is preferred
  • 1 tablespoon optional lime juice or sriracha adds acidity or heat as desired

  • In a large bowl, mix together the shredded green and red cabbage, shredded carrots, steamed edamame, and sliced green onions. Toss gently to ensure even distribution.
  • Add the sliced grilled chicken breasts on top of the vegetable mixture.
  • In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, olive oil, honey, grated fresh ginger, and minced garlic until well-combined.
  • Pour the vinaigrette over the salad ingredients and toss gently to combine everything.
  • Finish with optional toppings like toasted sesame seeds and sliced almonds. Serve immediately.

Notes

If prepping ahead, store the vinaigrette separately to keep the salad crisp.
