For the Ganache

  • 4 fl oz Heavy Cream Use full-fat, cold from the refrigerator
  • 7 oz Dark Chocolate 70% cocoa, chop finely

For Dusting

  • 0.5 cup Unsweetened Cocoa Powder Sifted for a smooth finish

How to Make Dark Chocolate Truffles

  • Finely chop the dark chocolate into small pieces and place it in a heatproof bowl.
  • In a small saucepan, heat the cold heavy cream over medium heat until it’s steaming, not boiling.
  • Pour the hot cream over the chopped chocolate, cover the bowl, and let it rest for 3-5 minutes.
  • Gently whisk the mixture until it’s smooth and fully combined.
  • Transfer the ganache to a clean bowl, cover it with plastic wrap, and refrigerate for at least 2 hours.
  • While the ganache chills, sift the unsweetened cocoa powder into a shallow bowl.
  • Once the ganache is set, scoop small portions and roll them into balls.
  • Roll each truffle in the sifted cocoa powder until they're fully coated.
  • Place the truffles on a plate to set before serving.

Notes

For an extra flavor boost, consider a sprinkle of sea salt before serving. Store truffles in an airtight container.
