Cheesecake Layer

  • Preheat the oven to 350°F (175°C). Grease a baking dish with cooking spray.
  • Melt the unsalted butter and semisweet chocolate chips in a medium saucepan over low heat. Remove from heat and whisk in both sugars.
  • Add in the eggs one at a time, mixing well after each. Stir in vanilla extract and red food coloring.
  • Sift in the flour, cocoa powder, and salt, mixing gently until just combined.
  • In a separate bowl, beat the cream cheese and sugar until smooth. Mix in an additional egg until well combined.
  • Pour half of the brownie batter into the prepared dish. Spread cheesecake mixture on top, then add remaining brownie batter. Swirl together gently.
  • Bake for 30-35 minutes. Check doneness with a toothpick; it should come out with moist crumbs.
  • Allow the brownies to cool completely before slicing into squares.
