Ingredients
  

For the Dates

  • 12 pieces Medjool Dates or regular dates if Medjool isn’t available

For the Filling

  • cup Peanut Butter smooth peanut butter ideal, can substitute with almond or cashew butter

For the Chocolate Coating

  • ¼ cup Coconut Oil for melting the chocolate
  • ¼ cup Cacao or Cocoa Powder to create homemade chocolate
  • ½ cup Dark Chocolate use a not overly sweet variety
  • Sea Salt Flakes recommended for a finishing touch

Instructions
 

How to Make Stuffed Dates

  • Line a large baking tray with parchment paper to prevent sticking.
  • Carefully slice open each medjool date and remove the pit.
  • Spoon just under 1 teaspoon of peanut butter into each date.
  • Melt the coconut oil for about 30 seconds and mix in the cacao powder.
  • For optional chocolate, melt store-bought chocolate until smooth.
  • Drizzle or dip the stuffed dates in the chocolate mixture.
  • Chill in the refrigerator for about 20 minutes until the chocolate hardens.
