Instructions for Making Truffles

  • In a medium saucepan, combine sugar, eggnog, and softened unsalted butter. Bring to a gentle boil over medium-high heat, stirring constantly for about two minutes or until the mixture thickens slightly.
  • Remove the saucepan from the heat and stir in the rum extract and nutmeg until well combined.
  • Carefully pour the mixture into a large bowl. Add the marshmallow cream and white chocolate morsels, stirring vigorously until everything is smooth and creamy.
  • Line a baking sheet with parchment paper. Pour the chocolate mixture onto the sheet evenly and refrigerate for 1-2 hours until it becomes firm yet pliable.
  • Once chilled, cut the mixture into small pieces and roll each piece into smooth balls.
  • Place the rolled truffles in the freezer for about 1 hour to become extra firm.
  • Melt the white chocolate wafers in a microwave-safe bowl in short intervals, then dip each truffle into the melted chocolate and sprinkle with nutmeg.
  • Return the coated truffles to the refrigerator for at least 30 minutes until the chocolate coating has set.

Notes

Allow your eggnog mixture to cool completely before rolling to prevent stickiness. Experiment with flavors and variations for a unique twist.
