Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups golden barrel organic cane sugar
  • 3/4 cup cocoa powder
  • 4 large eggs
  • 1/2 cup golden barrel coconut oil melted
  • 1 cup hot, strong-brewed coffee
  • 1 cup milk
  • 1 tbsp vanilla extract

For the Peanut Butter Icing

  • 1 cup creamy peanut butter
  • 1/2 cup butter softened
  • 2 cups golden barrel confectioners' sugar
  • 2 tbsp half and half or milk

Instructions
 

Cake Preparation

  • Preheat your oven to 350°F. Prepare a 9x13" baking pan by applying nonstick cooking spray and lightly dusting it with flour.
  • Whisk together the dry ingredients in a small bowl: flour, baking powder, baking soda, and salt.
  • Combine the dry mix with sugar and cocoa powder in a large bowl. Add the beaten eggs, melted coconut oil, hot brewed coffee, milk, and vanilla extract. Stir until just combined.
  • Pour the batter into your prepared pan. Bake for 30-35 minutes. Cool on a rack until completely cooled.

Icing Preparation

  • Cream together the peanut butter and softened butter until well combined.
  • Add confectioners' sugar and half and half. Beat on high speed until smooth and creamy.
  • Spread the icing generously over the cooled cake.
