For the Sauce

  • 1/4 cup soy sauce substitute with tamari for gluten-free
  • 2 tablespoons rice wine can use apple cider vinegar as substitute
  • 1 tablespoon fish sauce optional for vegetarian versions
  • 1 tablespoon cornstarch can swap with arrowroot powder
  • 1 tablespoon fresh ginger ground ginger works in a pinch; reduce amount

For the Turkey Bowl

  • 1 tablespoon olive oil can be replaced with canola or vegetable oil
  • 1 cup onion any variety works well; shallots are a good alternative
  • 1 pound ground turkey 93/7 for best flavor and moisture; can use ground chicken or beef
  • 2 cloves garlic can use garlic powder
  • 1 cup red pepper substitute with bell pepper or seasonal vegetables

For Serving

  • 1/4 cup scallions can substitute with chives
  • 2 tablespoons sesame seeds toasted peanuts can be used as an alternative
  • 1/4 cup cilantro can use parsley or basil

Instructions
 

Preparation

  • Prepare the Ingredients: Start by dicing the onion, mincing the garlic, chopping the red pepper, and slicing the scallions, keeping the white and green parts separate for garnish.
  • Make the Sauce: In a bowl, whisk together the soy sauce, rice wine, fish sauce, cornstarch, and grated ginger until smooth and well combined.
  • Cook Onions: Heat a drizzle of olive oil in a skillet over medium-high heat. Add the diced onion and cook for about 1 minute, until fragrant and slightly translucent.
  • Brown Turkey: Add the ground turkey, minced garlic, and chopped red pepper to the skillet. Cook for 5-7 minutes until the turkey is browned and cooked through, allowing it to sit undisturbed for a few seconds to enhance flavor.
  • Add Sauce: Pour the prepared sauce into the skillet, stirring for 1-2 minutes until it thickens and coats the turkey and veggies.
  • Serve: Remove from heat, fold in the sliced scallion whites, and serve the mixture over rice or a low-carb grain such as cauliflower rice. Top each bowl with sesame seeds, cilantro, and the green parts of scallions for a fresh finish.
