For the Salad

  • 1 bunch asparagus Tender parts, chopped into 1-inch pieces
  • 1 cup frozen peas Thawed
  • 3 medium radishes Thinly sliced
  • 1 cup feta cheese Crumbled
  • 1/4 cup pine nuts
  • 1/4 cup fresh mint or basil leaves For garnish

For the Dressing

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic Grated
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 medium avocado Ripe

Preparation

  • Bring a pot of salted water to a rolling boil for blanching the asparagus.
  • Add chopped asparagus to boiling water and blanch for about 1 minute.
  • Transfer asparagus to a bowl of ice water for 1 minute to halt cooking, then drain and pat dry.
  • In a mixing bowl, whisk together olive oil, lemon juice, garlic, sea salt, and black pepper until combined.
  • Toss the blanched asparagus and thawed peas in the dressing until well coated.
  • Transfer salad to a serving platter, drizzle with avocado dressing, and sprinkle with feta, radishes, pine nuts, and garnish with mint or basil.
