Ingredients
  

For the Batter

  • 1 medium ripe banana, mashed adds natural sweetness and moisture
  • 1 cup unsweetened almond milk dairy-free option
  • 1/2 cup smooth almond butter or peanut butter as substitute
  • 1/4 cup maple syrup pure sweetness
  • 2 tablespoons melted coconut oil or any neutral oil
  • 1 teaspoon baking powder helps the oats rise
  • 1 teaspoon cinnamon warm spice for flavor
  • 1/4 teaspoon sea salt enhances flavors

For the Oats

  • 2 cups whole rolled oats provides heartiness and fiber
  • 3/4 cup chopped pecans or walnuts/hazelnuts as substitutes
  • 1/2 cup blueberries, fresh or frozen adds sweetness

For Topping

  • 2 tablespoons brown sugar for sweetness
  • 1/4 cup coconut flakes for tropical flavor

Baking Instructions

  • Preheat the oven to 350°F and grease an 8x8-inch baking dish.
  • In a large bowl, mix together the mashed banana, almond milk, almond butter, maple syrup, and melted coconut oil until smooth.
  • Add the baking powder, cinnamon, and sea salt to the wet mixture, then whisk again until blended.
  • Gently fold in the whole rolled oats, ¾ cup of pecans, and ½ cup of blueberries. Pour into the prepared baking dish.
  • Sprinkle the remaining blueberries, the remaining ¼ cup of pecans, brown sugar, and coconut flakes on top.
  • Bake for 40 to 50 minutes, or until golden brown and the center is set. Let it cool for about 10 minutes before serving.

Notes

Serve warm with a drizzle of almond butter for extra indulgence. Store leftovers in an airtight container in the fridge for up to 4 days.
