How to Make Blueberry Baked Oatmeal

  • Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish lightly with oil.
  • In a large bowl, mash the ripe banana until smooth. Whisk in the almond milk, almond butter, maple syrup, and melted coconut oil until everything is well combined.
  • Add the baking powder, cinnamon, and sea salt to the wet mixture and gently whisk until fully incorporated.
  • Stir in the whole rolled oats, half of the blueberries, and 3/4 cup of chopped pecans. Mix until well combined.
  • Pour the oatmeal mixture into your greased baking dish, spreading it evenly with a spatula.
  • Sprinkle the remaining blueberries, chopped pecans, brown sugar, and coconut flakes on top.
  • Bake for 40 to 50 minutes, or until the top is golden brown and the center is set.
  • Allow the oatmeal to cool for about 10 minutes before slicing to help it hold its shape.
