Ingredients
  

For the Salad

  • 1/2 pound Carrots peeled into ribbons
  • 2-3 Scallions thinly sliced
  • 1 cup Red cabbage shredded
  • 2 Garlic cloves minced

For the Dressing

  • 1 tablespoon Soy sauce
  • 1 tablespoon Rice wine vinegar
  • 1 tablespoon Orange juice
  • 1 tablespoon Orange zest
  • 1 teaspoon Sesame oil
  • 1 tablespoon Chili crisp
  • 1 teaspoon Honey

For Garnish

  • 1 tablespoon Fresh cilantro chopped
  • 1 tablespoon Fresh parsley chopped
  • Sesame seeds for garnish
  • Chopped peanuts for garnish
  • Peanut sauce for drizzling

Instructions
 

Preparation

  • Peel the carrots into long ribbons using a vegetable peeler or a mandoline slicer.
  • Shred the red cabbage and slice the scallions thinly.
  • Whisk together the soy sauce, rice wine vinegar, orange juice, orange zest, sesame oil, chili crisp, and honey in a small bowl until well combined. Add minced garlic and stir again.
  • Toss the carrot ribbons, red cabbage, and scallions together in a large mixing bowl.
  • Pour the dressing over the salad and toss well to coat all ingredients evenly.
  • Top with fresh cilantro, parsley, sesame seeds, and chopped peanuts.
  • Drizzle with peanut sauce before serving.
  • Serve immediately or let the salad sit for 15-30 minutes.

Notes

Best enjoyed fresh but can be stored in the fridge for up to 3 days. Dress just before serving to keep it crisp.
