  • 2.5 tablespoons peanut butter opt for natural without added oils or sugars
  • 1/4 cup chia seeds organic black chia seeds are best
  • 1 cup almond milk can substitute with other plant-based milk
  • 1 teaspoon vanilla extract adds depth of flavor
  • 1 pinch sea salt to enhance flavors
  • 2 tablespoons maple syrup grade A dark maple syrup is ideal

For Toppings

  • 1 medium banana sliced into 1/4-inch rounds
  • 1/4 cup almond flakes toasted
  • berries fresh, various types
  • shredded coconut optional, for texture
  • cacao nibs optional, for a bitter contrast

Main Instructions

  • In a medium bowl or mason jar, combine 2.5 tablespoons of peanut butter with 1/4 cup of almond milk. Whisk until smooth.
  • Stir in 1/4 cup of chia seeds, 1 teaspoon of vanilla extract, 2 tablespoons of maple syrup, and a pinch of sea salt.
  • Pour in the remaining 3/4 cup of almond milk and mix everything until well combined.
  • Place the mixture in the refrigerator for at least 1 hour, stirring every 15-20 minutes for the first half hour.
  • While the pudding is chilling, slice the banana, toast almond flakes, and gather additional toppings.
  • Once chilled, spoon the pudding into bowls and layer with toppings. Serve immediately.

Notes

Enjoy with a sprinkle of shredded coconut for added sweetness and texture.
