  • Start by chopping the medium yellow onion, large carrots, celery ribs, and baby potatoes. Layer these fresh, vibrant veggies at the bottom of your slow cooker for a hearty base.
  • Place the corned beef brisket firmly on top of the vegetables. Season it generously with kosher salt, freshly ground black pepper, and store-bought pickling spice. Don’t forget the thyme sprigs and bay leaves for extra flavor!
  • Gently pour in enough water to almost cover the meat. This will help ensure an even cook and keep everything moist and delicious throughout the slow cooking process.
  • Cover and cook on low for 7-8 hours or high for 4.5 hours. The beef should be tender to the touch when it’s ready.
  • About 45 minutes to 1 hour before serving, add your cabbage wedges on top. Allow it to cook down until tender, soaking up all those lovely flavors!
