  • 4 pounds Corned Beef Brisket
  • 1 packet Spice Packet or create your own with mustard seeds, peppercorns, and a bay leaf

For the Vegetables

  • 1 pound Baby Potatoes or larger potatoes cut into chunks
  • 1 pound Baby Carrots fresh or frozen
  • 1 medium Yellow Onion or shallots as a milder substitute
  • 1 head Cabbage or Brussels sprouts

For the Cooking Liquid

  • 4 cups Chicken Stock or vegetable stock for a lighter version

Preparation

  • Begin by placing the baby potatoes and carrots at the bottom of your slow cooker.
  • Arrange the onion pieces and cabbage wedges around the sides of the vegetables.
  • Place the corned beef brisket right in the center and sprinkle the spice packet generously on top.
  • Pour the chicken stock over everything in the slow cooker.
  • Cover your crock pot and set it to cook on low for about 8-9 hours.
  • Once cooked, carefully remove the brisket, slice against the grain, and serve with the vegetables.

Notes

Serve with hearty bread to soak up the delightful juices. Allow the corned beef to rest for a few minutes before slicing for maximum juiciness.
